Day 1 Dinner

Delicious "Nutrient Rich Black Bean Soup" from Unprocessed while my wife ate cheese enchiladas! Its ok. I'm full and satisfied. I should mention I only drink water. I'm not much into sodas or other drinks.

Had some frustrations at the market but I'll get into that tomorrow.

  3. The soup is actually good but beware, if you follow the recipe you will end up with A LOT OF SOUP! i had to freeze a sizable portion. It might be best cutting everything down by half if your not feeding a football team. :). Let me know how it turns out.

  5. I made it tonight along with the lentil loaf from the book. I think I used every electrical appliance in my kitchen between the two of them. Thank you so much for telling me to do only half the recipe. Even with doing so I have so much soup! Plus, did you notice that the directions are missing when to add the mushrooms and bok choy? I ended up heating the soup for about an hour before blending it because afte 30 minutes I realized I had never added those. I am going to eat the soup for lunch tomorrow. The lentil loaf was pretty good, but a lot of work. My food processor only holds 11 cups so I had to do it in batches. I would also suggest doing 1/2 of that recipe. It yielded 2 loaves, which is a lot for me! I am going to have major leftovers. By the way, my name is Heather. Nice to "meet" you, Andre!

    1. Omg, that explains why I forgot to add the mushrooms and bok choy! Haha. I also had to add it after when I saw they were still sitting on the table. I didn't even add the mushrooms because my pot was filled to capacity.

      Thanks for the tip on the Lentil loaf Heather. I may tackle that one this weekend along with the Thai Noodle from AJ's episode 31 video. I guess the good thing is if we're ever hungry and short on time, we can go to the stockpile of leftovers. :)
