Day 9 Dinner

Tonight the wife was nice enough to make me veggie stuffed enchiladas, without cheese of course. Honestly I missed the cheese in this dish but I was content with the cheeseless option.

For desert we made an orange chocolate mousse torte from Unprocessed so you know there was no processed sugar, oil or salt. It was good but would have been much better had we followed the recipe better. :).

Day 9 Lunch

Yes, I'm having the thai noodle leftovers again for lunch. Brown rice noodles and veggies in a home made unprocessed sauce. Don't judge me. :)

Also I had some mixed nuts as a pre lunch snack.

Day 9 Breakfast

Oatmeal with cinnamon and date paste and a strawberry smoothie.

Day 8 Dinner

Yes...i made this again. I still had sauce left over from the first batch. I just cooked another batch of the brown rice noodles and blanched another batch of veggies. This time I got the wok out and tossed all the ingredients over fire. In doing this I dried out the liquid a little too much. Next time I'll save enough to pour onto the plate. I like it saucy.



Day 8 Lunch

No pre-lunch snack today. Was running errands and just was too busy to get hungry. Had black bean soup from Day 1 dinner. Still delicious.

Day 8 Breakfast And One Week Update

I've made it through a week with just a few mishaps. I feel good. I did have some cravings for sushi, mud pie, chocolate chip cookies, and some chicken dishes but only when I saw/smelled them. The craving was in large part due to sweet or salty ingredients within the dish rather than the meat.

It is a challenge eating out and trying to leave out all the processed ingredients but I'm working on it.

So today I had plain oatmeal for breakfast. I wasn't thinking because I finished it before taking a picture. :)

Day 7 Dinner

Took a very long nap after lunch. Had no appetite for dinner but threw together a tiny bowl of the thai noodles. Thats right...again! I didnt blanch veggies this round so it's just the brown rice noodles and the delicious sauce I still have from yesterday.

Day 7 2nd lunch and major failure

Yes, I had 2 lunches today. Burning over 1,200 calories can have that effect.

So we are at El Torito today with my Mom. Everyone goes with the buffet but I order off the menu so I can have my dish prepared the unprocessed way. I take the time to ask the waiter how the spinach and vegetable enchiladas are prepared. First of all I was shocked to find out they use butter to saute the ingredients. So I ask if the chef could saute the veggies in water not butter or oil. Not a problem he says. Feeling good about this restaurant visit! I'm even proud of myself for asking if the chips are fried or baked and staying away from them because they are obviously fried. The food comes. It looks good. I dig in and everything seems right and delicious. 3/4 of the way into my enchiladas and I realize there is a small amount of cheese inside!! I couldn't believe after all that prep to make sure there was no oil that that I forgot to make sure there was no cheese. Damn! I really felt bad.

Here is my dish way before I realized my mistake.

Day 7 Lunch

First, I have to say congrats to my wife for completing her first half marathon under her goal time. I'm impressed and very proud od you. Now anout the race and what I ate. Unfortunately I had to take energy Gu, which is a small paste like substance yoy take for energy suppliments during long endurance activities. I'm sure its loaded with processed sugars. I haven't read the label yet but I have no doubt. So today wasnt such a victory on the unprocessed front. It was such a small quantity though. I also took a few bites of a bagel at the finish line and took a few sips of Power Aid for electrolite replenishment.

Anyway, i got back on track during lunch. I was starving!! I hade left overs from the Thai Noodles I made the night before. The noodles are made from brown ride. This dish is easily my favorite dish of Chef AJ since I started this experiment!

Its 3:45 am, morning of the half marathon. About to eat a typical marathon breakfast. Peanut butter sandwich. Should be a fun race with Cris today!

Day 6 Dinner

Ohh yes! I made Chef AJ's Thai Noodles from episode 31. LOVED IT. also made her house dressing but it was kind of a dud. I have to try making it again. I went wrong somewhere, I'm sure.

Day 6 Lunch

A bit bummed about lunch because I realized too late that this vegan lentil wrap was made with a small amount of canola oil. :(

Day 6 Breakfast

Morning! I wanted to share pictures of the organic produce we received at our front door yesterday. See pics below.

Had some oatmeal with a tablespoon of 100% pure maple ($16 a bottle) and a strawberry smoothie with unsweetened almond milk of course.

Today will be a long day on the road for work so the Mrs. Was nice enought to pack some food that I'll share later.

Day 5 Dinner @ A Restaurant

So the family wanted to go out for dinner. I suggested Japanese. The girls were excited about that. I have to say I really wanted to have my usual tuna roll or salmon roll but instead I had some veggie rolls and my usual miso soup. I also ordered pickled vegetables. I'll consider this a restaurant victory.

Easy lunch. Leftovers from Day 1 dinner. There's so much of this black bean soup left over, I had to freeze some.

Day 5 Breakfast

Short on time and don't want oatmeal again. I threw together a bowl of food made from last night's dinner and ate it in the car.

By the way, we signed up for an organic local farms delivery program about two weeks ago. I opened the front door this morning and was surprised to see the delivery was already at the front door. Haven't sifted through it yet but snapped a couple of photos. Google it.

Day 4 Dinner

Tonight's dinner was delicious and filling. I had two if these bad boys.

Let me know if you want the ingredients. Veggies sauted in white wine. No oil or salt. Just table tasty. Garnished with home made tomatillo sauce.

My buddies came by today to taunt me with chocolate cake and ice cream. Luckily they didn't buy the kind I like! Of course they tried to taunt and entice me with "regular food." I was quite happy with my delicious burritos, courtesy of the wife again! Thanks Cris.

Also, i had a great weight lifting workout today. Felt so much energy.

Day 4 Breakfast

Thanks wifey for making breakfast. Ha some oatmeal with cinnamon, a slice of whole grain toast and a smoothie with Unsweetened almond milk-4fresh strawberries- 1 frozen banana and about 14 pitted dates. Yikes! 14 was about 7 too much. It was a bit too sweet but it was nice to have breakfast made.

As soon as I sat down I realized i had no time to eat, i had to pour my smoothie into a plastic cup, grab my bowl and eat in the car. :) I've got to wake up earlier...

Day 3 Dinner

When I came home I snacked on some corn my wife had made as part of her baked chicken dinner for the fam. Yes they still eat meat in front if me. It doesn't bother me at all until they start eating cookies and brownies. She hasn't baked either yet since I started but I have seen some deserts cross my path that I try to ignore

For dinner I had a yummy cheeseless veggie pizza on what bread and seasoned with Benson's Table Tasty. The pizza had my tomato sauce from last night's spaghetti, mushrooms, garlic, red onions, basil, and red and yellow bell peppers.

Side note: I was surprised how my small portions from Chef AJ's presentation held me over until dinner. I never had to pull out the banana or mixed nuts I bought earlier today. I'm still thinking about that pasta she made today. Its on youtube as episode 31 of The Chef And The Dietitian.

Day 3 lunch by Chef AJ

Today was a treat having Chef AJ cook lunch for me today. Ok, it wasn't just for me. She showed us hiw to make a delicious dressing that she features in her latest youtube video. We sampled the dressing on carrots. She made an excellent brown rice pasta which is also on youtube. Then she finished it off with an Orange Chocolate Mousse Torte from her book. My only complaint was that there wasnt enough of the pasta for seconds.

All dishes were of course made with no salt, no sugar and no oil.

Soo goood.
