Day 3 Pre lunch snack

11am, stomach is asking for food. Picked up some mixed nuts, bananas and mixed veggies here at work. I'll save the nuts and bananas for the afternoon. For now I have to keep an open mind with this mix of broccoli, cauliflower, celery and carrots. Of course I threw away the ranch dressing this came with.

You would never catch me eating something like this. I know my aversion to this is all mental. Here goes...

* UPDATE*  I learned today that cauliflower I like best out of these veggies, next would be broccoli, then carrots and lastly the celery.  I didn't care much for celery plain like this.  Maybe with some Trader Joe's almond or peanut butter?  Next time!

Day 3 Breakfast

It's day 3 and I haven't lost my mind. Nice. Today's breakfast is one I've never had before. A special thank you goes out to the wifey for making today's breakfast. The smoothie is made of almond milk, strawberry, banana and date paste. Normally not something I'd be into but this tasts pretty good. Also, for some reason she knows how to cook oatmeal better than I do. Go figure.

Chef AJ will be coming to my company today for a lunch and learn cooking class. I hope she makes enough to cover lunch! :)

Day 2 Dinner

It was a nice treat to be home early. I had time to cook spaghetti marinara. Now this was a dish I've been looking forward to making. I wasn't working with a recipe, just scavenging anything I could find in the fridge that was plant based. In hind sight, I should have looked for a recipe. It came out a bit bland and for a while I thought I ruined it when I blended a bunch of spinach with the tomatoes. This dish made me miss salt a lot. Using Benson's Table Tasty helped at the table though. Plus the wife had suggestions on how I could have sauted all the veggies in white wine first.

I won't give up in you spaghetti marinara! I should mention the spaghetti was a whole wheat variety from Trader Joes.

I'm stuffed. Got to work on not doing that too much.





Day 2 Lunch And Snacks.

So my oatmeal didn't last me long. After having breakfast at 6:45am I was hungry by 9am. Already out of the house for the Dr. I had to start munching on the almond butter sandwich I packed for lunch. I dont have a picture of my sandwich but i do have a picture of the almond butter label.

Around 1 was hungry for a snack. The only thing near by was a food truck. I was tempted to get a bean burrito but knew they wouldnt have a wheat tortilla option so it was an unripened banana and apple for me. Not too exciting but it did the trick.

Day 2 Breakfast

Today is an irregular day for me but hopefully my planning will get me through the day. Had to skip work today for a Doctor's appointment. Didn't have much time for breakfast and had to pack a lunch.

So this is a rush, no frills bowl of oatmeal with cinnamon and a slice of whole grain wheat bread. I need to find a better way to make oatmeal!

Day 1 Dinner

Delicious "Nutrient Rich Black Bean Soup" from Unprocessed while my wife ate cheese enchiladas! Its ok. I'm full and satisfied. I should mention I only drink water. I'm not much into sodas or other drinks.

Had some frustrations at the market but I'll get into that tomorrow.

Day 1 afternoon snack and confession

Its 4:52 and I'm hungry. Lunch held me over as long as expected, a little over 3 hours.

Confession time to anybody out there who comes across this post. Every day around this time I go to the vending maching and get a bag of peanut m&m's, with few exceptions. Now I'm about to eat this overpriced mix bowl of fruit of which the only thing I can identify is the watermellon. I've never been big on fruit. I want to like this. Here goes...
