OMG. Chef wifey nailed it with this portobello mushroom burger! Delicious, unprocessed and did I say delicious? Post if you want the chef to share the recipe.
I'm sorry about this...I had posted something earlier and it didn't take.
Here is the recipe. First I had purchased two large portobello mushroom caps from our local grocer. I had cleaned and washed them and placed them on a shallow baking sheet. I had turned on my oven to broil. You can either broil or grill this, I had chosen to broil it.
The Rub: 1/4 cup balsamic vinegar 2 tablespoons earth balance (this is like a butter/oil substitute) 1 teaspoon dried basil 1 teaspoon dried oregano 1 tablespoon minced garlic
Mix all of the above ingredients together and with a cooking brush or a spoon, cover the tops of the mushrooms with the rub. Place in the broiler or grill for 5-8 minutes. Take them out - turn them over and brush or place more rub onto the undersides of the mushroom caps. Place them back on the broiler or grill for another 5-8 minutes.
I didn't have any whole wheat hamburger buns so I used what we had which was whole wheat/whole grain bread. I toasted it slightly. Andre had made some homemade humus the night before so I had used that to spread on the bread for added flavor. I had grilled some white onions and yellow bell peppers in a pan with white wine until they were a little soft. If you don't have white wine, you can use applesauce or water or earth balance, whichever you have will work.
Cut up some lettuce and tomatoes, you can add some avocados if you like and ENJOY!
